The Peroxide Oxidation of Membrane Lipids and Natural Antioxidants

Abstract: The ways, in which membrane lipids are oxidised, are considered and the initiating and protective systems influencing the rate of this process are classified. The regulatory role of the interrelation between the composition of the membrane lipids and the degree of their oxidation, which makes it possible to regard this process as a procedure for the rapid renewal of the composition of the lipids and the alteration of the functional activity of membranes, is discussed. The kinetic characteristics of natural antioxidants as radical process inhibitors are presented and the characteristic features of their activity are deduced. They are discussed in terms of their involvement in the regulation of the peroxide oxidation of lipids.
